The History of Jedediah’s Sourdough
Sourdough was the first form of leavening available to bakers. Sourdough starters were a mainstay for early settlers in the West who longed for some variation to their very plain diet. During the early 1800’s, the pioneering mountain men first brought sourdough out to the Rocky Mountains on explorations and fur trapping expeditions. Later, gold and silver prospectors brought sourdough into the Western U.S. during the Gold Rush days. Cowboys and early ranchers continued the tradition, but with modern refrigeration and the onset of processed foods, the popularity of sourdough cooking slowly diminished.
Today that trend is turning around and original sourdough starters are becoming very valuable. Jedediah’s Sourdough Starter is a living organism that is over 100 years old. Its consistent flavor will continue to be as long as proper care is taken. Unlike instant dry starters that come from kits or those made with dairy products, Jedediah’s starter only uses natural fermentation.
